Instructions:
Prepping the Turkey:
1. Remove giblets and neck from turkey. Pat turkey dry with paper towels.
2. In a bowl, combine butter, apple cider, Dijon mustard, smoked paprika, garlic powder, onion powder, thyme, salt, pepper, and fresh herbs.
3. Rub the butter mixture all over the turkey, inside and out.

Cooking the Turkey:
1. Increase smoker temperature to 325°F (163°C).
2. Continue cooking until the internal temperature of the thickest part of the thigh reaches 165°F (74°C). This should take another 2-3 hours.
3. Remove turkey from smoker and let rest for 15 minutes before carving.
