How to Smoke Turkey Legs on a Charcoal Grill (6 Steps)
Smoked turkey legs are a wonderful treat usually found only at special fairs and festivals, but you can easily create your own on a charcoal grill right at home.
Things You'll Need
- Turkey Legs
- Charcoal
- Wood chips
- Curing brine optional
- Dry rub seasoning optional
Instructions

Rinse your turkey legs and soak them in brine--1/2 cup sugar, 1/2 cup salt and water--for 12 to 24 hours if desired for curing.

Soak several handfuls of woodchips in water for 30 to 60 minutes

Mix together your desired dry seasonings, and rub them on the turkey legs.

Light the charcoal grill and let the charcoal burn until they still have their shape but are ash on the outside.

Spread the wet wood chips directly onto the hot coals.

Place your turkey legs on the grill and close the lid. They should be finished smoking in about 2 hours.
