A raw turkey should be kept at a temperature of 40 °F (4 °C) or below to prevent the growth of harmful bacteria. Ideally, a turkey should be thawed in a refrigerator set to 40 °F (4 °C) or below. If the turkey is thawed in cold water, it should be submerged in cold tap water and changed every 30 minutes to prevent the growth of bacteria.
