How to roast a pork loin in a convection oven:
1. Preheat the oven to 400 degrees Fahrenheit.
2. Pat the pork loin dry with paper towels and season the outside with salt, pepper, and any desired spices. Garlic powder, paprika, and dried thyme are all great options.
3. Place the pork loin on a baking rack that can sit inside of a roasting pan, this creates a crispy outer layer.
4. Roast in the preheated oven for 20 minutes per pound.
5. Check the pork loin's internal temperature using a meat thermometer, to make sure it has reached 145 degrees Fahrenheit.
6. Remove from the oven and let the meat rest for 15 minutes before slicing and serving.
