Ingredients:
- Pork loin roast, 22-22 lbs (1.1-1.3 kg)
- Garlic, 2 cloves, minced
- Black pepper, 1 teaspoon Salt
- 1/4 teaspoon
- Olive oil, 1 tablespoon
Instructions:
1. Preheat the oven to 400 degrees Fahrenheit (205 degrees Celsius).
2. In a small bowl, combine the minced garlic, black pepper, and salt.
3. Brush the pork loin with olive oil.
4. Sprinkle the spice mixture over the pork loin, rubbing it in to coat all sides.
5. Place the pork loin on a baking tray.
6. Insert a meat thermometer into the thickest part of the pork loin.
7. Roast for 20 minutes, then reduce the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius). Continue roasting for another 20 minutes or until the internal temperature of the pork loin reaches 145 degrees Fahrenheit (63 degrees Celsius) .
8. Remove from the oven and let rest for 10 minutes before slicing and serving.
