How do you smoke a pork shoulder?
## How to Smoke a Pork Shoulder
Ingredients:
* 10- to 12-pound pork shoulder (also called a pork butt or Boston butt)
* 1 cup apple cider vinegar
* 1/4 cup brown sugar
* 1 tablespoon kosher salt
* 1 tablespoon chili powder
* 1 tablespoon ground cumin
* 1 teaspoon black pepper
* 1 teaspoon onion powder
* 1 teaspoon garlic powder
Instructions:
1. Prepare the smoker.
Preheat the smoker to 225 degrees Fahrenheit (107 degrees Celsius). If using a charcoal smoker, add enough charcoal to cover the bottom of the smoker. Light the charcoal and let it burn until it is hot and covered in white ash. If using a gas smoker, turn on the burner and let it preheat for 10 minutes.
2. Prepare the pork shoulder.
Remove the pork shoulder from the refrigerator and let it come to room temperature for 1 hour. Rinse the pork shoulder with cold water and pat dry.
3. Make the rub.
Combine the apple cider vinegar, brown sugar, salt, chili powder, cumin, black pepper, onion powder, and garlic powder in a small bowl. Rub the mixture all over the pork shoulder.
4. Place the pork shoulder in the smoker.
Place the pork shoulder on the grate in the smoker. Make sure that the meat is not touching any other pieces of meat or the sides of the smoker.
5. Smoke the pork shoulder.
Smoke the pork shoulder for 6 to 8 hours. The pork should be cooked through when it reaches an internal temperature of 205 degrees Fahrenheit (96 degrees Celsius).
6. Let the pork shoulder rest.
Remove the pork shoulder from the smoker and let it rest for 1 hour before slicing and serving.
Tips:
* To add more flavor to the pork shoulder, you can inject it with a marinade or brine before smoking.
* If you don't have a smoker, you can also cook the pork shoulder in the oven. Preheat the oven to 250 degrees Fahrenheit (121 degrees Celsius) and cook the pork shoulder for 4 hours, or until it reaches an internal temperature of 205 degrees Fahrenheit (96 degrees Celsius).
* Pork shoulder is a very forgiving cut of meat, so don't be afraid to experiment with different rubs and cooking methods.
