How to Make Low-Fat, High-Fiber Brownies With a Boxed Mix
Reduce the fat and add fiber to your favorite packaged brownie mix by replacing the oil and egg with a surprising ingredient: black beans. These deliciously moist brownies contribute to a healthier lifestyle without sacrificing taste.
Things You'll Need
- 1 box brownie mix (any brand, preferably not a reduced-sugar variety)
- 1 15.5-oz. can black beans (low-sodium variety recommended)
- Nonstick cooking spray
- Chopped nuts (optional)
- Colander or strainer
- Blender
- Rubber spatula
- Wire whisk
- Mixing bowl
- 9-by-13 or 8-by-8 baking pan
Instructions

Empty the can of beans into a colander or strainer, and rinse well. Return the beans to the can, and add enough water to cover the tops of the beans.

Pour the beans and water into the blender, cover tightly, and blend on the highest speed until completely liquified, and no white bits are visible.

Pour the bean mixture into the brownie mix, using a rubber spatula to scrape the sides of the blender jar. Stir with the wire whisk until completely mixed. Do not add eggs or oil. Chopped nuts may be added if desired, but they will add fat and calories to the recipe.

Check the brownie mix package to determine which size baking pan to use. Lightly spray the pan with the nonstick spray. With the rubber spatula, scrape the batter into the pan.

Bake the brownies according to the directions on the package. Check for doneness at the recommended time by inserting a clean toothpick into the center; if the batter clinging to the toothpick when you remove it is still wet, bake for five more minutes. Cool before removing from pan.
