Ingredients:

Instructions:
1. Make the Crust:
- In a large bowl, whisk together the flour, sugar, and salt.
- Add the chilled butter and use your fingers to work it into the flour mixture until it resembles coarse crumbs.
- Add the ice water, one tablespoon at a time, until the dough just comes together.
- Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Apples:
- While the dough is chilling, peel, core, and slice the apples.
- In a large bowl, combine the apples, sugar, flour, cinnamon, nutmeg, salt, and lemon juice.
- Stir until the apples are evenly coated.
3. Assemble the Pie:
- Preheat the oven to 425°F (220°C).
- On a lightly floured surface, roll out the dough to a 12-inch (30 cm) circle.
- Transfer the dough to a 9-inch (23 cm) pie plate and trim the edges.
- Pour the apple filling into the pie crust.
- Dot the apples with the butter pieces.
4. Make the Meringue:
- In a clean bowl, beat the egg whites and cream of tartar until foamy.
- Gradually add the sugar, one tablespoon at a time, until the meringue is stiff and glossy.
