How to Cook Turkey at High Temperatures (5 Steps)

Cooking a turkey at high temperatures shortens the cooking time, improves browning and makes the skin crispy, but it can result in overcooked breast meat before the thigh meat has reached a safe 165 degrees Fahrenheit. Undercooked turkey can cause food poisoning. To ensure that your turkey has cooked through to a safe temperature, always use an instant read meat thermometer. Look for these in the housewares section of stores.

Things You'll Need

  • Roasting pan
  • Instant read thermometer

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Season your turkey according to your recipe. Do not stuff the turkey as the stuffing will not be cooked when the turkey is done.

  3. Place the turkey into the roasting pan. The orientation of the turkey, such as breast side up or down, does not matter.

  4. Cook the turkey for three to six hours or until the instant read thermometer reads 165 degrees Fahrenheit in the thigh, breast and wing.

  5. Remove the turkey and let it rest for five to 10 minutes before serving.
