How do you separate fat from turkey juice?

Here are three simple methods to effectively separate fat from turkey juice:

Refrigeration and Skimming:

1. Let the turkey juice (or drippings) cool completely in the refrigerator. This allows most of the fat to solidify on the surface.

2. Once chilled, you'll notice a solidified layer of fat on top of the juice.

3. Use a large spoon or ladle to carefully skim off the solidified fat.

4. Continue skimming until most of the fat has been removed.

Basting Bulb Syringe:

This method works best when there is not a lot of fat;

1. Allow the turkey juice to cool slightly, but not solidify.

2. Use a basting bulb syringe to suck up the fat that has accumulated on the surface. Squeeze the fat out into a separate container and repeat the process until you remove most of the fat.

Paper Towel Method:

1. Let the turkey juice cool slightly but not solidify.

2. Place a few layers of paper towels over a fine mesh sieve set over a bowl.

3. Slowly pour the turkey juice through the paper towel-lined sieve.

4. The paper towels will absorb most of the fat, allowing the defatted turkey juice to collect in the bowl.
