_Ukrainian Borscht (Vegetarian Version)_
Ingredients:
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 large beets, peeled and grated
- 3 medium potatoes, peeled and cubed
- 2 cups of vegetable broth
- 2 cups of water
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
- Sour cream, for serving (optional)
Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.
2. Add the garlic and cook for 1 minute more.
3. Add the grated beets, potatoes, vegetable broth, and water to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the vegetables are tender.
4. Stir in the parsley, salt, and pepper to taste.
5. Serve hot with a dollop of sour cream, if desired.
