What is Ifisashi dish?
Ifisashi (or Ifuzai) is a dish of fish, shellfish and seaweed which is native to the Ryukyu Islands. Its name derives from the shape of the wooden boxes in which the fish is fermented, which are tied with twine. Originally created as a way of preserving fish without refrigeration, the traditional Ifisashi dish often uses the poisonous Red Snapper, whose poison is neutralised by the fermentation process.
