Will a microwave-convection oven brown food or does it still come out as if microwaved only?

Microwave-convection ovens have both a microwave function and a convection function. The microwave function works by generating microwaves that excite water molecules in food, causing them to vibrate and generate heat. This heating method is quick and efficient, but it does not brown food.

The convection function of a microwave-convection oven works by generating hot air that circulates around the food, cooking it more evenly and faster than a microwave alone. This process can also brown food because hot air can cause the Maillard reaction to occur which results in the golden crust and a rich flavour and aromas that are typical of roasted and broiled dishes. Thus with combination cooking, in comparison to using a microwave exclusively to heat food, you also get all the health benefits that come with grilling, roasted and browning of foods without all the fats that is normally added.

So, by using the convection function, a microwave-convection oven can both cook food quickly and efficiently like a microwave and brown it like a conventional oven.
