Ingredients:

- 1 cup turmeric, peeled and thinly sliced

- 1/4 cup red chili powder

- 1/4 cup coriander powder

- 1/4 cup cumin powder

- 1/4 cup fenugreek powder

- 1/4 cup mustard powder

- 1 teaspoon salt

- 1/4 cup oil

- 1 teaspoon mustard seeds

- 2 teaspoons cumin seeds

- 1/4 cup vinegar

Instructions:

1. In a large bowl, combine the turmeric, chili powder, coriander powder, cumin powder, fenugreek powder, mustard powder, and salt. Toss to coat the turmeric evenly.

2. Heat the oil in a large pan over medium heat. Add the mustard seeds and cumin seeds and cook until they begin to pop.

3. Add the turmeric mixture and cook for 5-7 minutes, stirring frequently, until the turmeric is tender.

4. Add the vinegar and cook for an additional 2-3 minutes, stirring frequently.

5. Remove the pan from the heat and let cool completely.

6. Store the turmeric pickle in a clean, airtight container in the refrigerator. It will keep for up to 2 months.
