2. Make the sauce: While the steak rests, melt the butter in the same skillet over medium heat. Add the shallots and cook until softened, about 2 minutes. Stir in the mustard, sherry, and beef broth. Bring to a simmer and cook until the sauce has reduced by half. Stir in the heavy cream, parsley, thyme, lemon juice, and cognac (if using). 3. Finish: Slice the steak against the grain. Spoon the sauce over the steak. Garnish with additional parsley and serve immediately.
