How to Cook Potatoes Cut Up in Squares With Pork Chops

Potatoes have long been considered a go-to pairing for meat dishes, and pork chops are no exception. Pork chops are a versatile meat that you can cook in different ways; the potatoes paired with them are equally versatile. Cutting potatoes into squares or cubes, lets you make the potatoes more flavorful, as well. Three delicious ways to cook potatoes are roasting, a saute-and-roasting combination, and as potato hash. All three methods pair well with pork chops and minimize the amount of extra work involved on your end.

Roast Separately From Pork Chops

  1. Remove the potato skins and chop into cubes. Roasting potatoes with the skins is also an option, particularly for those who want the health benefits found in potato skins. If you are keeping the skins, wash the potatoes before chopping into cubes.

  2. Toss the potatoes with olive oil and a blend of herbs or spices, depending on your preference.

  3. Add the potatoes to a baking sheet.

  4. Roast at 425 degrees Fahrenheit for 40 minutes.

  5. Cook the pork chops as desired, while the potatoes are roasting.

Saute and Roast With Pork Chops

  1. Peel the potatoes and cut into cubes. If you prefer to leave the skins on, wash the potatoes thoroughly before cutting into cubes.

  2. Heat a small amount of olive oil in a skillet on medium high. While the oil is heating, sprinkle the potatoes and pork chops with the seasoning of your choice.

  3. Place the pork chops in the hot pan, along with the potatoes. Cook for two to three minutes on each side and toss the potatoes, when flipping.

  4. Add the pork chops and potatoes to a roasting pan (a baking dish also works) and add your choice of glaze.

  5. Bake for 45 minutes at 350 F.

Potato Hash With Pan-Seared Pork Chops

  1. Bring water to a boil in a saucepan. Peel the potatoes, slice them in half, and then add to the water. Let simmer for 10 minutes.

  2. Heat the olive oil in a deep skillet on medium-low heat. Dice the partially cooked potatoes into small cubes and drop in the skillet. Cover and cook for 15 to 20 minutes.

  3. Season the pork chops while potatoes are cooking. Sear on medium high for one minute on each side. Reduce the heat to medium low and cook, covered, for an additional three minutes on each side.

  4. Remove from heat and serve with potato hash.
