Recipe 1: Classic Pork Loin Stew
Ingredients:
- 1 pound boneless pork loin, cut into 1-inch pieces
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 cups water
- 1 bay leaf
- 1/2 cup baby carrots, chopped
- 1/2 cup red potatoes, quartered
- 1/2 cup frozen peas
- 1/4 cup chopped fresh parsley
Instructions:
1. In a large bowl, combine the pork loin pieces, flour, salt, and pepper. Toss to coat.
2. Heat the olive oil in a Dutch oven or large pot over medium-high heat.
3. Add the pork loin pieces and sear until browned on all sides. Remove from the pot and set aside.
4. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
5. Add the chicken broth, water, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
6. Add the carrots, potatoes, peas, and pork loin pieces to the pot. Bring to a simmer and cook until the vegetables are tender and the pork is cooked through, about 15 minutes.
7. Stir in the parsley and serve immediately.
Recipe 2: Italian Pork Loin Stew
Ingredients:
- 1 pound boneless pork loin, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes with juice
- 1/2 cup red wine
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped fresh basil
Instructions:
1. Heat the olive oil in a Dutch oven or large pot over medium heat.
2. Add the pork loin pieces and sear until browned on all sides. Remove from the pot and set aside.
3. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
4. Add the diced tomatoes, red wine, chicken broth, Italian seasoning, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
5. Add the pork loin pieces back to the pot and bring to a simmer. Cook until the pork is cooked through, about 15 minutes.
6. Stir in the basil and serve immediately.
