* High temperature: 15 minutes per pound (205°C or 400°F)
* Reverse sear: Cook pork shoulder to an internal temperature of 165 degrees Fahrenheit in the oven at 250 degrees Fahrenheit. Then sear pork shoulder on the grill at high heat for 5 to 10 minutes per side until the outer crust is browned.
