Instructions

1. Combine 1 lb. fresh (or thawed from the freezer) ground beef or turkey in a mixing bowl with one egg. The egg helps prevent the meatloaf from becoming dry.

2. Mix the two ingredients together with a fork until the egg is evenly distributed among the meat.

3. Crush the stuffing mix in its bag so that the pieces are small, like breadcrumbs. Large cubes of bread will become hard and dry if they are not rendered into smaller, more uniform pieces.

4. Add 1/2 cup dried stuffing mix to the meat. Experiment with flavors by using original stuffing, Southern style or stuffing made with a variety of herbs. If the meatloaf mixture seems loose and hard to shape into a loaf, add a few more tablespoons of stuffing mix. Mix until the stuffing mix is hardly noticeable.

5. Spray a 13-by-9 inch loaf pan with nonstick cooking spray. Put the meat mixture into the pan and pat down until the top is even.

6. Bake at 350 degrees F for 45 minutes. Check the meatloaf by sticking a knife into the center. The middle should appear slightly pink, but not red. Continue to bake if 45 minutes is not sufficient.
