What is Toupie style ham?
Toupie style ham is a type of French country ham that is cured and smoked in a specific way. The process begins by selecting a carefully trimmed whole pork shoulder. The shoulder is then dry-cured in a salt mixture for a period of several weeks, during which time it is regularly massaged to ensure an even distribution of the curing salt. After the curing process, the shoulder is hung and smoked over a slow fire for a period of several days, until it reaches a desired internal temperature. The smoking process gives the ham its distinctive flavour and aroma.
Once it is smoked, the ham is hung to cool and dry for a period of several weeks. The end result is a ham with a dense and slightly firm texture, with a rich and smoky flavour.
