What is the best cranberry chicken recipe?
Ingredients:
- 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts
- 1/4 cup honey
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the chicken, cranberries, walnuts, honey, balsamic vinegar, olive oil, salt, and pepper. Toss to coat.
- Spread the chicken mixture onto a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the cranberries are softened.
