How does one find a recipe for Panocha?

Here's a simple recipe for making Panocha, a traditional Mexican candy made with piloncillo (unrefined cane sugar):

Ingredients:

* 1 piloncillo (unrefined cane sugar cone), grated or finely chopped

* 1/4 cup water

* 1 tablespoon cornstarch

* 1/4 teaspoon ground cinnamon

* 1/4 teaspoon anise seeds (optional)

Instructions:

1. In a small saucepan, combine the grated or chopped piloncillo and water. Bring to a simmer over medium heat, stirring occasionally, until the piloncillo dissolves and the mixture thickens slightly.

2. In a separate bowl, dissolve the cornstarch in a small amount of cold water until smooth. Add the cornstarch mixture to the piloncillo syrup and stir until fully incorporated.

3. Continue to cook the mixture over medium heat, stirring constantly, until it thickens and becomes glossy (10-15 minutes). Remove the saucepan from the heat and let it cool slightly.

4. Add the ground cinnamon and anise seeds (if using) to the mixture and stir to combine.

5. Pour the Panocha into a shallow pan or mold lined with parchment paper. Let it cool completely until it solidifies (1-2 hours).

6. Cut the Panocha into desired shapes, such as squares or diamonds. Serve and enjoy!

Note: Panocha can also be made using granulated sugar instead of piloncillo. If using granulated sugar, you may need to adjust the amount of water accordingly to achieve the desired consistency.
