Garlic loses flavour when frozen if thawed then refrozen and thawed again however it is usually still safe to eat. For long term storage it is preferable to roast whole or chopped, then freeze if it must be frozen at all. Freezing whole bulbs of garlic has the greatest advantage of avoiding a soggy texture
