Can You Juice Butternut Squash?

Though often treated like a vegetable -- roasted, salted, tossed in with stews and soups -- botanically speaking, butternut squash is a fruit. And, like many other fruits, butternut squash can be juiced. Just don't expect a full and refreshing glass from a few quick pressings. Usually, though not always, you'll need to combine the butternut with other fruit or vegetable juices. An added bonus is that butternut works in both sweet and savory drinks.

Squash It Up

  • Get this straight: twisting a chunk of butternut squash on an orange juicer doesn't yield a whole lot of liquid. Instead, reach for a blender or smoothie machine. Once pulped, the butternut flesh is thick yet watery enough to make a delicious juice. As the skin of a butternut squash is tough and leathery, peel the squash before use. It also helps to remove the seed and stringy pulp from the center. Once chopped into thumb-sized pieces, you can add them to the juicer.

Loose With Juice

  • On its own, butternut juice might taste a little strange. Get creative with the flavor combinations. For example, by combining half a medium butternut squash with two soft bananas, some pineapple chunks and plenty of apple juice, you'll get a sweet, delicious drink. In fact, apple juice makes a good base for any butternut squash juice recipe; the sweetness enhances the taste. Other ingredients to try include berries such as strawberries and blueberries, and tropical fruits such as mango and kiwi.

Ready for Raw?

  • Butternut squash is a tough fruit to cut. So, while fresh, uncooked butternut is perfectly acceptable -- and safe -- to use, cooked squash may be easier to handle. Put the entire squash into an oven set to 400 degrees Fahrenheit for 45 minutes. You can slice the squash in half once finished and scoop out the insides with a spoon. The flesh should come away from the outer peel with ease.

Savor the Savory

  • Though fruit juices are usually sweet, butternut squash can create a savory alternative. Blend half a butternut squash with spinach, carrot, a garlic clove and water -- the result is a healthful, savory smoothie packed with vitamins. For a slightly sweeter approach, add some pumpkin pie spice and a dash of apple juice to a juiced whole butternut to create a ghoulishly delicious brew at Halloween time.
