Can plastic jars be used for canning mayonnaise?
Plastic jars should not be used for canning or preserving mayonnaise at home. Plastic does not seal as well as glass or other approved canning jars, and it is not safe to can mayonnaise because it is an oil-based product. Oil-based products can cause botulism, a serious and life-threatening illness, if not properly processed.
