How to Substitute Brown Sugar for Honey (3 Steps)
When substitutions between honey and brown sugar are made, the cook needs to take into account that one is dry while the other is liquid; wrongly interchanging the two in a recipe can completely alter its outcome. A few simple things need to be taken into account when substituting one for the other, but once this is done, it is an easy switch.

Figure out how much honey is called for in the recipe. Each cup of honey should be replaced by 1 1/4 cup of brown sugar, as well as a 1/4 cup of liquid.

Reduce or completely take out any baking soda that was in the recipe. This was used to cut the acidity of the honey, but is no longer needed if using brown sugar.

Taste the mix. If it is not sweet enough, add more brown sugar gradually until the desired sweetness is achieved.
