What is the recipe for jalapeno pistachios?
Ingredients:
- 1 pound raw pistachios, shelled and unsalted
- 1 tablespoon kosher salt
- 1 tablespoon sugar
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1/4 cup vegetable oil
- 1/4 cup water
- 1 tablespoon cornstarch
- 1 tablespoon rice vinegar
- 2 tablespoons chopped fresh cilantro
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine the pistachios, salt, sugar, cumin, chili powder, garlic powder, onion powder, and cayenne pepper. Toss to coat.
3. In a small saucepan, combine the vegetable oil, water, cornstarch, and rice vinegar. Bring to a simmer over medium heat, stirring constantly. Cook until the mixture has thickened, about 1 minute.
4. Pour the glaze over the pistachios and toss to coat.
5. Spread the pistachios out on a baking sheet and bake in the preheated oven for 15 minutes, or until toasted and golden brown.
6. Remove from oven and let cool completely.
7. Sprinkle with cilantro before serving.
