I have a recipe that calls for can of whole tomatoes but only fresh garden tomatoes. What do need to replace them?
Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 medium cloves garlic, minced
- 1/4 cup chopped onion
- 6 large ripe garden tomatoes, peeled, seeded, and diced
- 2 tablespoons chopped fresh basil leaves
- 2 tablespoons chopped fresh thyme leaves
- Salt and pepper to taste
Instructions:
1. In a large saucepan, heat the olive oil over medium heat.
2. Add the garlic and onion and cook until softened, about 5 minutes.
3. Increase the heat and add the tomatoes, basil, thyme, and 2 cups water.
4. Bring the sauce to a boil, reduce the heat to low, and simmer for 15 minutes.
5. Add salt and pepper to taste.
Tips:
* To peel the tomatoes, cut a shallow X in the bottom of each one. Place the tomatoes in boiling water for 30-60 seconds or until the skins start to peel away. Remove from water and let cool slightly before peeling.
* If you don't have time to peel the tomatoes, you can also use canned whole tomatoes. Just be sure to drain them before using them.
