Here are a couple of recipes that make use of unripe tomatoes:

Green Tomato Chutney

Ingredients:

* 2 pounds unripe tomatoes, chopped

* 2 cups sugar

* 1 cup white vinegar

* 1 teaspoon ground cinnamon

* 1/2 teaspoon ground cloves

* 1/2 teaspoon ground allspice

* 1/4 teaspoon ground nutmeg

* 1/4 teaspoon cayenne pepper

* 1/2 cup golden raisins

* 1/2 cup chopped walnuts

Instructions:

1. In a large pot, combine the tomatoes, sugar, vinegar, cinnamon, cloves, allspice, nutmeg, and cayenne pepper. Bring to a boil, stirring occasionally.

2. Reduce heat and simmer for 15 minutes, or until tomatoes softened and the sauce has thickened.

3. Stir in the raisins and walnuts.

4. Continue to simmer for 15 minutes, or until the raisins and walnuts are softened and the chutney is heated through.

5. Let the chutney cool completely.

6. Serve chutney with crackers, bread, or cheese.

Fried Green Tomatoes

Ingredients:

* 2 pounds unripe tomatoes, sliced 1/2-inch thick

* 1 cup all-purpose flour

* 1 teaspoon salt

* 1/2 teaspoon black pepper

* 2 eggs, beaten

* 1 cup vegetable oil

Instructions:

1. Preheat oven to 400 degrees F (200 degrees C).

2. In a shallow dish, combine the flour, salt, and black pepper.

3. In a separate bowl, beat the eggs.

4. Dip the tomato slices into the egg wash, then the flour mixture.

5. Heat the oil in a large skillet over medium heat.

6. Cook the tomato slices in the hot oil for 2-3 minutes per side, or until golden and crispy.

7. Place the fried tomatoes on a baking sheet and bake in the preheated oven for 10 minutes.
