How do you know when to harvest potatoes?

Potato Harvesting Timeline

- 6 to 8 weeks after planting: New potatoes are ready to be dug.

- 8 to 12 weeks after planting: The foliage of maincrop potatoes start to turn yellow and die.

- 2 to 3 weeks later (10 to 15 weeks after planting): The skins have set, and the potatoes can be dug.

_Other Indicators that Potatoes are Ready to Harvest:_

- The plant's stems and leaves begin to wilt and turn yellow.

- The potatoes swell and push the soil above them.

- The small roots near the surface of the potatoes have been replaced by a rough brown or tan "skin."

- The tubers should be firm and well-formed, with no cracks or blemishes.

- You should be able to gently rub off the skins of the potatoes without damaging the flesh.
