What can I make with chicken potatoes and rice?
Here's a simple recipe for a one-pot chicken, potato, and rice dish:
Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup brown rice
- 2 cups chicken broth
- 1 cup frozen peas and carrots
- 1/4 cup chopped fresh parsley
Instructions:
1. Heat the olive oil in a large skillet or pot over medium heat.
2. Add the chopped onion and cook until softened, about 5 minutes.
3. Add minced garlic and cook for 1 minute more.
4. Season the chicken pieces with salt and pepper, then add them to the skillet.
5. Cook for 5-7 minutes, or until the chicken is browned on all sides.
6. Stir in the uncooked brown rice and mix well to coat it with the oil and seasonings.
7. Add the chicken broth and frozen peas and carrots. Bring to a boil, then reduce the heat to low, cover the skillet or pot, and simmer for 18 minutes, or until the rice is cooked and the chicken is cooked through.
8. Stir in the chopped fresh parsley and serve.
