Ingredients:
- 2 Uromastyx lizards, cleaned and gutted
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tomato, chopped
- 1 green bell pepper, chopped
- 1 cup chicken broth
- 1/4 cup chopped cilantro
Instructions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a large bowl, combine the cumin, coriander, black pepper, and salt. Rub the mixture all over the lizards.
3. Heat the olive oil in a large skillet over medium heat. Add the lizards and cook until browned on all sides.
4. Add the onion, garlic, tomato, and green bell pepper to the skillet and cook until the vegetables are softened.
5. Add the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour, or until the lizards are cooked through.
6. Sprinkle with cilantro and serve.
