Ingredients:
• 1 tablespoon olive oil
• 1/2 cup chopped onion
• 1/2 cup chopped green bell pepper
• 1/2 cup chopped red bell pepper
• 2 cloves garlic, minced
• 1 pound ground beef
• 1/2 cup taco seasoning
• 1 (15-ounce) can black beans, rinsed and drained
• 1 (15-ounce) can corn, drained
• 1 (10-ounce) can diced tomatoes with green chilies, undrained
• 1/4 cup chopped fresh cilantro
• 12 taco shells
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion, green bell pepper, red bell pepper, and garlic and cook until softened, about 5 minutes.
2. Add the ground beef and taco seasoning to the skillet and cook until the beef is browned, about 5 minutes.
3. Add the black beans, corn, tomatoes, and cilantro to the skillet and stir to combine. Bring to a simmer and cook for 5 minutes to allow the flavors to meld.
4. Warm the taco shells according to the package instructions.
5. To assemble the tacos, place a taco shell on a plate. Add some of the beef and vegetable filling to the shell, then top with your favorite toppings, such as shredded cheese, lettuce, tomatoes, sour cream, and guacamole.
