Dinner Ideas Using Flour Tortillas
Flour tortillas are among the most versatile products to stock a pantry with. This mainstay of Mexican food works deliciously with foods of the American Southwest and cuisines from south of the border, but they’re just as tasty with the flavors of other cuisines, too. They’re even great for dessert.
Sandwich Wraps

Flour tortillas make an ideal base for wrapped sandwiches filled with family favorites. Think Reuben, club, BLT and anything from the deli. Slice leftover meats and veggies into long, easy-to-roll strips for a quick, economical dinner idea. Salad-style sandwich fillings -- tuna, chicken, egg, pimiento cheese -- work great in rolled sandwiches as long as the filling isn’t too runny. Line the tortilla with a thin layer of fresh spinach or lettuce leaves to minimize sogginess and to make the sandwich easier to handle.
Baked Pockets

Chop up leftover meats and cooked veggies to use as the stuffing in a baked pocket. Add some cheese, herbs and spices, perhaps a dollop of gravy or sauce, then fold the edges of the flour tortilla around the filling to form a square. Place seam-side down on a nonstick baking sheet and bake until tortillas are firm and filling is heated through. Leftover meatloaf makes an ideal filling for baked pockets and so do cooked fish fillets.

Spread pizza sauce over a flour tortilla and top it with favorite pizza ingredients. Place tortillas on a flat sheet pan before filling for ease of handling when baking, or place individually on a warm spot on a barbecue grill where each will be safe from direct flame.

Let lasagna, Napoleons and layered tortes inspire dishes for all courses using flour tortillas. Or think quiche. Press a flour tortilla into an oven-proof container slightly smaller than the diameter of the tortilla. Fill it with cooked diced meats and veggies, cheese and fresh herbs, then top with your favorite quiche custard, pop it into a hot oven and bake it till the center is firm. Fill a flour tortilla in a ramekin with fresh fruit or candy bits, top with softened ice cream, then refreeze before serving. Roll up chocolate chunks, cinnamon and fresh berries or sliced fruits, sprinkle the roll with cinnamon or powdered cocoa and pop it into the oven just till the chocolate melts.
