What is Veal Heel meat?
Veal heel, also known as osso bucco, is a cut of meat from the lower part of the hind leg of a calf. It is a tough cut of meat, but it is also very flavorful. Veal heel is often braised or stewed in order to tenderize it. This cut of meat has a reputation for making the most satisfying broth; a rich liquid base filled with flavorful compounds that can serve as an ideal liquid when making rice stews.
