What is velcorin?
Velcorin, or methyl cinnamate, is an organic compound with the formula CH3CH=CHCOOMe. It is an ester obtained by formal condensation of cinnamic alcohol and methanol. Velcorin is a synthetic flavoring agent having an intense sweet floral odor. It is mainly used to produce pineapple flavors. Commercially, velcorin is prepared from cinnamyl chloride and sodium methoxide. Velcorin is also an intermediary in the synthesis of other chemicals, such as phenylacetaldehyde dimethyl acetal. It is also used in the production of some fragrances and perfumes.
