How to Bake a Turkey in a Convection Oven
If you are not using your convection oven you to bake a turkey, you are missing out on a great technological advance in cooking. Along with improved browning, the juices remain longer in the turkey. As a general rule, take your old turkey recipe for the oven and reduce the temperature by 25 degrees and the cooking time by one quarter. This is a comparable ratio from oven to convection oven. Still, watch the temperatures with a meat thermometer until you get used to your convection oven.
Things You'll Need
- 1 (12- to 16-pound) turkey
- 3 tbsp. melted butter
- 1 tbsp. crushed black pepper
- ½ cup chicken stock
- Shallow roasting pan
- Meat thermometer
Instructions

Preheat the convection oven to 375 degrees F. Select the "Roasting" option if your convection oven has it.

Place the turkey breast side up in a shallow roasting pan. Brush the butter over the turkey. Sprinkle it with the pepper.

Place the turkey into the convection oven. Cook it for 45 minutes.

Remove the turkey and baste it with the chicken stock, then return the turkey into the convection oven.

Remove the turkey every 20 minutes and baste with the pan drippings. Check the turkey's internal temperature with the meat thermometer. When the turkey's internal temperature is 160 degrees F, it is ready to be taken out.

Set the turkey off to the side and let it rest for 20 minutes. This allows the juices to resettle into the meat and the internal temperature will rise above the 165 degree mark as the heated bones continue to cook the turkey internally.
