Classic Peruvian-Style Shrimp Ceviche
This recipe uses fresh, vibrant flavors and simple ingredients for a delicious and authentic ceviche.

Ingredients:
* 1.5 pounds raw, peeled and deveined shrimp (medium size)
* 1 red onion, thinly sliced
* 1 large jalapeño pepper, thinly sliced (or adjust to your spice preference)
* 1 cup chopped cilantro
* 1 lime, juiced (about 1/4 cup)
* 2 lemons, juiced (about 1/2 cup)
* 1/2 cup fresh orange juice
* 1/4 cup chopped red onion (for garnish)
* 1/4 cup chopped cilantro (for garnish)
* 1 tablespoon olive oil
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 teaspoon ground cumin
* Pinch of cayenne pepper (optional, for extra heat)
* 1/2 cup leche de tigre (optional, for a more traditional flavor)
Instructions:
1. Prepare the shrimp: Rinse the shrimp under cold water and pat dry. Cut the shrimp into bite-sized pieces.
2. Mix the marinade: In a large bowl, combine the lime juice, lemon juice, orange juice, olive oil, salt, pepper, cumin, and cayenne pepper.
3. Combine ingredients: Add the shrimp, red onion, jalapeño pepper, and cilantro to the marinade. Stir well to ensure all ingredients are coated.
4. Marinate: Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or up to 4 hours. The shrimp will "cook" in the acidic marinade.
5. Serve: Once marinated, carefully remove the shrimp from the marinade, leaving the liquid in the bowl.
6. Garnish: Divide the ceviche among individual serving bowls. Garnish each serving with chopped red onion and cilantro.
7. Optional: Drizzle a tablespoon of leche de tigre over each serving.
8. Serve immediately: Enjoy with corn chips, tostadas, or crackers.
Tips:
* You can adjust the spice level by adding more or less jalapeño pepper.
* For a milder flavor, omit the cayenne pepper.
* For a more traditional ceviche, use leche de tigre, a Peruvian marinade made with a mixture of citrus juices, chili peppers, and fish stock.
* Serve with fresh corn tortillas or a side of avocado slices.
