Why does fresh meat look wet?
The appearance of freshness in meat is primarily attributed to its moisture content. When meat is freshly cut or purchased, it has a naturally high moisture level that gives it a glistening, wet appearance. This moisture also contributes to the softness and tenderness of the meat.
As meat ages or is exposed to air, it gradually loses its moisture through evaporation. This process causes the meat to become drier, darker in color, and less appealing in appearance. Thus, the wetness of fresh meat serves as a visual indicator of its quality and freshness.
