Why would sausage look white?
There are a few reasons why sausage might look white.
* The meat used to make the sausage is white. This is most common in pork sausages, which are made from ground pork shoulder or pork butt. These cuts of meat are naturally white, and they don't take on much color when cooked.
* The sausage has been cooked in water. When sausage is cooked in water, the proteins in the meat coagulate and turn white. This is why boiled sausages are often white, even if they are made from dark meat.
