How do you cook a skirt steak?
To cook a skirt steak, you'll need the following ingredients and tools:
Ingredients
- 1 skirt steak
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional seasonings: garlic, rosemary, thyme, etc.
Tools
- A sharp knife
- A cutting board
- A cast-iron skillet or grill pan
- Tongs
- A meat thermometer (optional)
Instructions
1. Prepare the steak: Trim any excess fat from the steak. If you want to make sure that the steak cooks evenly, you can also score it by cutting shallow slits into the meat, about 1/4-inch deep and spaced 1/2-inch apart.
2. Season the steak: Rub the steak with olive oil and season with salt and pepper. You can also add any other seasonings you like, such as garlic, rosemary, or thyme.
3. Preheat your skillet or grill pan: Turn on your stove or grill to high heat and allow the skillet or grill pan to heat up.
4. Cook the steak: Once the skillet or grill pan is hot, add the steak and cook for about 3-5 minutes per side, or until the steak reaches your desired doneness. (For medium-rare, cook the steak for about 3-4 minutes per side; for medium, cook for 4-5 minutes per side.) If you're using a meat thermometer, the internal temperature of the steak should be 135 degrees Fahrenheit for medium-rare and 145 degrees Fahrenheit for medium.
5. Let the steak rest: Once the steak is cooked, remove it from the heat and let it rest for a few minutes before slicing and serving. This will help the steak to retain its juices and stay tender.
Tips for cooking skirt steak
- Skirt steak is best when cooked to medium-rare or medium doneness. Any more than that, and it will become tough and chewy.
- If you're not sure how to judge the doneness of the steak, you can use a meat thermometer. The internal temperature of the steak should be 135 degrees Fahrenheit for medium-rare and 145 degrees Fahrenheit for medium.
- Skirt steak can be cooked on the stovetop or on the grill. If you're cooking it on the grill, be sure to use a high-heat setting and keep the steak close to the coals.
- Skirt steak is a flavorful cut of meat, but it's also very lean. This means that it can dry out easily if you overcook it. To prevent this, be sure to cook the steak for only a few minutes per side.
- Let the steak rest for a few minutes before slicing and serving. This will help the steak to retain its juices and stay tender.
