Here are a few low-sodium vegetable soup recipes:

Ingredients:

- 1 teaspoon olive oil

- 1 cup water

- 1 yellow onion, finely diced

- 1 green bell pepper, finely diced

- 1 tablespoon reduced sodium soy sauce

- 3 ½ cup beef or chicken broth

- ½ pound ground beef

- 1 teaspoon dried oregano

- ½ teaspoon garlic powder

- ¼ teaspoon low-sodium salt

- ¼ teaspoon black pepper

- 2 cups frozen corn, thawed

- ½ cup chopped Roma tomatoes

- ¼ cup chopped fresh parsley

Instructions:

1. In a large pot, heat the olive oil over medium heat.

2. Add the beef and onion and cook until the beef is no longer pink. The onion should soften.

3. Stir in the green pepper and cook for 2 more minutes.

4. Add the soy sauce, water, oregano, garlic powder, salt and black pepper. Bring to a boil, then lower heat and simmer for 10 minutes.

5. Stir in the corn and tomatoes and continue cooking for 5 more minutes.

6. Serve with a sprinkling of parsley.
