Can you use stainless steel to marinate meat in for 24 hours?
While stainless steel is generally considered safe for food preparation, it's not recommended to marinate meat in it for extended periods, including 24 hours. Some acidic ingredients used in marinades, such as vinegar or lemon juice, can react with the metal and leach small amounts of chromium, nickel, or iron into the food. These metals, in high concentrations, can be harmful to health.
Instead, it's better to use glass, ceramic, or food-grade plastic containers for marinating meat. These materials don't react with acidic ingredients and are safer for prolonged contact with food. Stainless steel is best suited for short-term food storage and cooking.
