How Bacardi rum is made?

Step 1: Selecting the Sugarcane

Bacardi rum is made from 100% sugarcane grown in specific areas of the Caribbean and Central America. Bacardi's long-term contracts with farmers ensure a consistent and high-quality supply of sugarcane.

Step 2: Harvesting the Sugarcane

The sugarcane is harvested by hand from October to April, when it is at its peak ripeness. The sugarcane stalks are cut close to the ground and transported to the mill within 24 hours.

Step 3: Crushing the Sugarcane

At the mill, the sugarcane is crushed to extract the sugarcane juice. This is done using a series of rollers that crush and press the sugarcane stalks, releasing the juice.

Step 4: Clarifying the Juice

The sugarcane juice is clarified by heating and filtering it to remove impurities. This step is crucial for ensuring a high-quality rum.

Step 5: Fermentation

The clarified juice is then fermented using a proprietary yeast strain. This yeast strain is responsible for the unique flavor of Bacardi rum. The fermentation process takes place in stainless steel tanks and lasts for 24 to 48 hours.

Step 6: Distillation

The fermented sugarcane juice is distilled to create the rum. Bacardi uses continuous distillation columns to efficiently extract the alcohol from the fermented liquid. The distillate is then passed through a series of chambers where it is refined.

Step 7: Aging

The rum is then aged in American white oak barrels for a minimum of two years. During the aging process, the rum develops its characteristic flavor and color. Bacardi uses different types of barrels, including new barrels and used whiskey barrels, to achieve the desired flavor profile.

Step 8: Blending

After aging, the different rums are blended together to create Bacardi's signature blends. Master blenders carefully taste and evaluate each batch of rum to ensure consistency in flavor and quality.

Step 9: Filtration

The blended rum is filtered to remove any remaining impurities and sediment. This filtration step also ensures a smooth and consistent texture.

Step 10: Bottling

The final step is to bottle the rum and package it for distribution. Bacardi rum is bottled in various sizes and shapes to meet the needs of different customers and markets.
