How do you cook bone in chicken stew?

## Bone-In Chicken Stew Recipe:

Ingredients:

- 4-6 bone-in, skin-on chicken breasts or thighs

- 1 tablespoon of olive oil

- 1 onion, diced

- 2 cloves of garlic, minced

- 2 stalks of celery, diced

- 2 carrots, diced

- 2 tablespoons of tomato paste

- 1 cup of chicken broth

- 1/2 cup of white wine

- 1/2 teaspoon of dried oregano

- 1/2 teaspoon of dried thyme

- 1 bay leaf

- Salt and pepper to taste

Instructions:

1. In a large pot or Dutch oven over medium heat, heat the olive oil.

2. Add the chicken breasts or thighs, skin-side down, and cook until browned on all sides.

3. Remove the chicken from the pot and set aside.

4. Add the onion, garlic, celery, and carrots to the pot and cook until softened.

5. Add the tomato paste and cook for 1 minute, stirring constantly.

6. Add the chicken broth, white wine, oregano, thyme, and bay leaf to the pot.

7. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes.

8. Add the chicken back to the pot and cook for an additional 15 minutes, or until the chicken is cooked through.
