Ingredients:
- 1 whole chicken (3-4 lbs)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/4 cup white wine
Instructions:
- Preheat oven to 425 degrees F.
- Rinse the chicken inside and out, and pat dry with paper towels.
- In a small bowl, combine the olive oil, salt, pepper, oregano, and thyme.
- Rub the herb mixture all over the chicken, inside and out.
- Place the chicken on a rotisserie spit, and secure it in place with the forks provided.
- If your oven doesn’t have a built-in rotisserie, you can use a rotisserie pan with a rack. Place the chicken on the rack, breast side up.
- Place the rotisserie in the preheated oven, and cook for 1 hour and 15 minutes, or until the chicken is browned and the juices run clear when the thigh is pierced with a knife.
- Baste the chicken with the white wine halfway through cooking.
- Let the chicken rest for 15 minutes before carving.
