Dr. Oz Chicken Parmesan Meatballs

Ingredients:

- 1 tablespoon olive oil

- 1 garlic clove, minced

- 1 small onion, finely chopped

- ½ red bell pepper, finely chopped

- 1 egg

- ½ cup almond flour

- ⅓ grated Parmesan cheese

- ½ teaspoon dried oregano

- 1 tablespoon Worcestershire sauce

- Salt and pepper to taste

- 1½ tablespoons marinara sauce, plus extra for serving

- 1 tablespoon basil, finely chopped

Instructions:

1. Preheat oven to 375°F (190°C).

2. Heat olive oil in a skillet over medium heat. Add garlic and onions and cook until the onion is soft, about 5 minutes. Add bell pepper and cook for 3 more minutes. Season with salt and pepper to taste. Let mixture cool down completely.

3. In a food processor, combine ground chicken, garlic, onion, egg, almond flour, parmesan cheese, and Worcestershire sauce. Season with salt and pepper to taste. Pulse until everything is combined. Do not over mix; otherwise, meatballs will get tough.

4. Roll the mixture into approximately 28 (1½ inch - 3.75 cm) round meatballs and place them on a baking sheet with a lightly greased parchment paper sheet. Set aside.

5. Transfer meatballs to an 8x8 inch pan. Spoon tomato sauce on top and sprinkle chopped basil over it.

6. Bake in the preheated oven for 30-35 minutes, or until meatballs are cooked.

Serve extra marinara sauce (warmed) separately or pour it atop meatballs once serving.
