How to Fry Chicken in Bacon Grease
Before shortening and vegetable oils were available commercially, cooks saved the grease from cooked
bacon and other drippings for later use. Bacon lends a smoky, salty flavor to all kinds of dishes and is excellent for frying. Frying your chicken in bacon grease is a great way to reuse the grease and make excellent-tasting fried chicken.
Things You'll Need
- Chicken
- Flour
- Paper or plastic bag
- Milk
- Pie pan
- Heavy duty fry pan
- Bacon grease
- Paper towels
Instructions

Rinse your chicken pieces thoroughly and cut them into the pieces you like. Pat the pieces dry with a paper towel.

Pour 1 cup of milk in a pie pan or other shallow dish.

Dredge your chicken in your seasoned flour in a paper bag or gallon-size plastic storage bag.

Place your skillet over medium heat or set your electric skillet to 375 degrees Fahrenheit.

Add enough bacon grease to the skillet so that it fills up to 1 inch of the pan. Add vegetable oil if you don't have enough.

Check the grease temperature. When it hits 375 degrees Fahrenheit, it's ready to fry in.

Place the chicken pieces in the fryer and fry until the outside is golden brown. Turn the chicken once and fry on the other side.

Cover the skillet and reduce the heat to 350 degrees F, allowing the chicken to cook for another 15 minutes or until done.

Take the chicken out of the skillet and place it on paper towels to drain. Continue frying your chicken in this manner until it is all done.
