Ingredients

* 1 cup dry lentils

* 2 cups water

* 1 tablespoon olive oil

* 1/2 onion, chopped

* 2 cloves garlic, minced

* 1 teaspoon ground cumin

* 1/4 teaspoon salt

* 1/4 teaspoon black pepper

Instructions

1. In a medium saucepan, combine the lentils, water, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender.

3. Add the cooked lentils and 1/2 cup of the cooking liquid to the skillet. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.

4. Stir in the cilantro and serve.
