What is a recipe for vegan
Ingredients
* 1 cup dry lentils
* 2 cups water
* 1 tablespoon olive oil
* 1/2 onion, chopped
* 2 cloves garlic, minced
* 1 teaspoon ground cumin
* 1 teaspoon ground coriander
* 1/2 teaspoon turmeric
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 cup chopped fresh cilantro
Instructions
1. In a medium saucepan, combine the lentils, water, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender.
2. While the lentils are cooking, heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, cumin, coriander, turmeric, salt, and pepper and cook for 1 minute more, or until fragrant.
3. Add the cooked lentils and 1/2 cup of the cooking liquid to the skillet. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
4. Stir in the cilantro and serve.
Tips
* To make the dal ahead of time, cook it according to the directions and then let it cool completely. Store the dal in an airtight container in the refrigerator for up to 3 days. When ready to serve, reheat the dal over low heat until warmed through.
* Dal is a versatile dish that can be served with a variety of accompaniments. Serve it with rice, naan, roti, or your favorite bread. You can also add vegetables to the dal, such as spinach, kale, or carrots.
