Desserts Made With Soy Milk
Soy milk is an alternative to dairy milk that is often consumed by vegans, the lactose intolerant and those who want to reduce their cholesterol. Bear in mind that it can be substituted in recipes that usually contain dairy milk. While it has a slightly different taste than cow's milk, it's barely noticeable when incorporated into a dessert recipe.
Chocolate Mousse

You can make vegan and dairy-free chocolate mousse by melting a bag of semi-sweet chocolate chips and blending them with a package of silken tofu and some soy milk, before chilling the mixture in the refrigerator to set. Be careful when choosing your chocolate chips, since some brands contain dairy derivatives. Add extracts to your mousse -- such as vanilla, orange, mint or almond -- to give it a bit of a different flavor.
Rice Pudding

Rice pudding is a straightforward dessert to make with soy milk. You simply have to replace the dairy milk or cream in your favorite rice pudding recipe with the same amount of soy milk. Whether you prefer to bake your rice pudding or cook it on the stovetop, soy milk will act in just the same way as its dairy counterpart. Recipes that contain ample spices -- such as nutmeg or cinnamon -- are most likely to taste like the original, since the spices will conceal the taste of the soy milk.
Fruit Cobbler

A classic dessert, fruit cobbler can be made with all kinds of different fruits. Peach and apple are old favorites, but why not spice them up a bit and go for peach and raspberry or apple and black currant? However, you could try something altogether more unusual, like pineapple or pear and chocolate. When you make the cobbler topping, replace the cows' milk in equal amounts with soy milk.
Pudding Pie

Pudding pie is a simple, yet tasty dessert that can easily be adapted in order to make it with soy milk. Follow your preferred pudding recipe -- chocolate, vanilla or butterscotch are good choices -- but swap the dairy milk for the same amount of soy milk. Once the pudding is cooked, pour it into a store bought or homemade cookie crust that has been baked for 10 minutes, and put it in the refrigerator to set for a minimum of three hours. If you'd rather, forget the cookie crust and just have pudding.
